Energy Balls

Looking for a quick pick-me-up after a workout? Or a mid-afternoon snack that gives you enough protein to hold you through dinner? Energy balls are delicious, portable, quick-to-make, and super healthy. We keep batches in the fridge and nibble them all week long.

Ingredients

1 1/4 cups rolled oats

2 tablespoons flax seeds

1/2 cup salt-free, sugar-free nut butter

1/3 cup honey

1/4 teaspoon salt

1 teaspoon vanilla

1/4 cup chocolate chips

1/4 cup ground almonds

To Make

Mix all ingredients together in a large bowl. Roll mixture into 1-inch balls. Store tightly covered in the refrigerator. Try it with dark chocolate chips or add a few tablespoons of dried fruit to the mix. Swap out the flax seeds for pumpkin or sunflower seeds. Once you get the basic recipe right, you tweak it to suit your taste.
