Marinated artichokes are one of my favourite pantry staples. Pop them in a salad straight from the jar. Blend them up with their own oil and a few fresh herbs for a tasty vegetable dip or tangy sandwich spread.
But, my absolute favourite thing to do is roast them and eat them warm from the oven as an appetizer. Simply drain the oil (reserve for use in salad dressings) and pat artichokes dry. Then place onto a baking sheet cut side down. Don't crowd the baking sheet, you want them to get nice and crisp. Bake for about 15-20 minutes in a pre-heated 200C oven. Remove from oven when they start to brown and get crispy on the top layer. Cool slightly on a rack and serve.
These are great on a charcuterie platter, as part of a crudités plate, or just on their own in a bowl. To be honest, my family loves these so much, they rarely make it out of the kitchen. Enjoy!
