A few weeks ago, we had a lot of watermelon that was going to turn bad. I did what I always do with my over-ripe fruit—chop it, toss it in a zip-top bag and freeze it. I was looking for something fun to make one evening and remembered the watermelon. This is a delicious adult version of a slushie that's salty, sweet, and satisfying!
Ingredients
1 watermelon (about 8 cups) rind removed, and seeds discarded. If you have time to freeze it, great. If not just chop and toss in the blender.
1 cup vodka
1/4 cup triple sec or cointreau
1/4 cup fresh lime juice
3-4 tablespoons agave syrup or simple syrup
2-3 cups ice if using fresh watermelon
Garnish: rind from 1 lime, salt, sugar, lime wedge
Mix It Up!
Prepare Glasses: Zest the rind from 1 lime and mix in a shallow saucer with 1 tablespoon coarse salt and 1 tablespoon sugar. Run a lime wedge around the edge of the glass and then roll glass rim in salt-sugar-rind mixture. Set aside.
Mix frozen watermelon (or fresh + 2-3 cups ice), vodka, triple sec, lime juice and agave in a blender. Add more ice if you want it thicker...or a little water if you want it thinner.
Pour into glasses and drink up!
